The spinning cone in Australia
In How to make wines a little weaker , we reported on the use of the spinning cone to reduce alcohol in wines in California. Who better to ask about the use of the spinning cone in Australia than Peter Gago, chief winemaker at Penfolds (part of the Foster’s Group). He said that although Penfolds does not have a spinning cone, the Foster's Group does have one at Lindemans Karadoc winery. Apparently it is not used much these days though in its time it was used to remove volatile aroma compounds from cask wines (bag in box) and coolers.
