Pavlidis is a young operation and still very much in the experimental stage, working out which grape varieites should go where and how best to turn the fruit of these young vineyards into wine. The estate was founded in 1998 by Christoforos Pavlidis, the second most important producer of marble in the Balkans. He settled on this spot next to Mount Falakro (a winter sports resort) after looking long and hard for a good place to plant vines. The area is surrounded by mountains...
