Pulling corks the Audouze way
François Audouze, Paris-based organiser of www.wine-dinners.com , is seen here at the Clos de Tart tasting demonstrating his own special way of extracting particularly old corks. He was single-handedly responsible for extracting the older corks for this one-off vertical back to 1887. In the short film below, he demonstrates his very particular method. Since he probably has more experience than anyone of opening seriously old wines, it is worth paying attention.
