The following is the text of a paper given by Brian Croser at the symposium in Canberra described earlier this week here . References are listed at the end of the paper. It's an honour to be invited to address the seventh University House Wine Symposium, especially as it is a celebration of 40 years of the modern Canberra wine industry.
