Traditional sherry bodegas are some of the world's most atmospheric wineries, kept as cool, damp and airy as possible to maintain the all-important flor yeast that floats on the surface of a fino-amontillado solera to keep the wine fresh. Below is González Byass's original bodega, much photographed. Above left is their head winemaker Antonio Flores in the small bodega where their flagship branded fino Tio Pepe is supposed to have originated.
