Warren Winiarski, owner and founding winemaker of Stag's Leap Wine Cellars in the Napa Valley has sent the following thought-provoking response to our conversations in  your turn on the issue of hang time. His perscipacious two lines at the bottom of this plea, too long for your turn , are from Donne, substituting "ripeness" for "love".
