Pirramimma's wines gain points while losing power
10 Aug 2005 by JR
Geoff Johnston of Pirramimma in McLaren Vale (whose wines, from organically grown grapes, are available in Majestic in the UK) sent me the following email after I asked him for some samples to illustrate the effect of the Australian alcohol reduction technology described in New techniques to make wines less alcoholic . I thought you would be interested to hear from a practitioner, albeit one who is clearly already a close associate of its chief proponent David Wollan. I am collecting some samples for your interest (same base wine e.g. 16.1% 2003 McLaren Vale Shiraz dealcoholized to 13.8% and ready for bottling after oak maturation)....
