As you could probably tell from yesterday's video of the entrance to González Byass's bodega, A smell of Jerez, this family-owed company has the most enviable set of archives on the sherry business. They celebrated their 175th anniversary last year and have an archivist hard at work on their extensive collection of old records, as managing director Mauricio González explains in the short film below.

The image above left shows the 'palma' mark made on a butt of sherry that is approved as being superior.
