How to serve mature vintage port
16 Feb 2005 by JR
Aeyal Gross, Tel-Aviv: We are about to open a bottle of Warre's port 1970 (my partner's birth year). For some lucky ones this must be an almost daily chore, but the oldest port I got to open so far was 1983. So, given that I don't have port tongs(!), a few questions: - any special care to take while opening the cork (except for being very careful???). - how long before opening shall I move the bottle to standing up (I don't have standing space in the wine cabinet, but thankfully it's not that warm now, even in Tel-Aviv)? - how long before drinking should it be opened? - to decant or not to decant ????? For how long? me:...
