A red wine match for a new way of cooking salt cod

Rodrigo Mainardi, Brazil: I've created a new recipe that turned out quite well. In a saucepan with butter you put some chopped leeks. After they've fried for a while you add Cognac, let it evaporate then add milk, sliced potatoes and previously desalted salted cod. Let it cook a little bit. Take the fish and the potatoes out of the saucepan and reserve. Make a traditional pesto. Rice the potatoes, add some milk from the pan and mix with the pesto. Put the resulting puree in a half cut tomato. Melt some Mascarpone cheese and some Queijo da Serra cheese in a saucepan and add the cooked cod. Serve with the tomato and white rice. It...
