Enrico Bagetta, Lot, France: I have been sent a copy of your article of jul 04 concerning the use of oak chips in France et inherents 'confirmations' of the creation of Vin de Pays and Vin de Table in Burgundy and Bordeaux. As one of the leading producers of oak chips, as well as a WSET graduate with many years spent in the UK wine business, I must bring to your attention that this is incorrect. For the time being, the use of oak chips is only permitted in the VdP d'Oc area by agreement with the relevant authorities and in extremely limited quantities (50hl) for scientific research and only for domestic distribution.
