What to serve with Malmsey

Carol Horton, Rome: What savoury or sweet dishes go best with Blandy's Rich Malmsey, please? I am imagining a lovely chocolate/vanilla swirl or butterscotch icecream for dessert, with a carrot or date cake. The first course might begin with a succulent grilled salmon or a sweet and sour pork dish?!  me: The sweetest madeiras are really quite sweet and strong and can therefore stand up to dishes as sweet as the ones you suggest, but don't forget they have very high acidity and a sort of oceanic/volcanic tang too. I'd suggest the lower-acid, rich, fortified PX wines from Andalusia or, looking at your location, the Moscatos of...
