Advice on escargots
Ken, Berwickshire, Scotland: A question for Nick really. I have a ridiculuous number of snails in my garden this summer. Are they edible? After seeing Heston Blumenthal demonstrating his snail porridge on tv last night I feel inspired! Nick: Dear Ken - I think that there is a world of difference between snails and edible snails and even if those in your garden do fall into the latter category there is a process of purging the snails which has to be undertaken before they can be eaten safely.
