Which component is most important for ageing?
Catherine Rudd, London: We had a question on our Advanced paper multi choice, which read, "For which of the following countries is varietal labelling uncommon?" a) Bulgaria b) Slovenia c) Greece d) Romania. I opted for Greece but can't seem to find much about this. I note one of your articles on Greece talks about a recent improvement in labelling, but am not sure. And in response to "Which of the following is most important in ageing for a fine wine (didn't say white or red)? a) tannin b) acidity c) alcohol d) fruit. I went for the acidity as whites don't have fruit tannins and Tokaji and Madeira seem to outlive most humans. ...
