Building a cellar - materials to be wary of

Richard Keers, Wimbledon:   I am building a home extension which includes a basement wine cellar. The builders are recommending waterproof concrete as the basement construction material. I recall reading an article about contamination of wine from an inappropriate cellar construction (or was it the paint finish?) and hoped that you would be able to provide some thoughts on the subject. me : I think it was my colleague Joanna Simon who suffered this mishap and have asked her for her advice.
