Does acidity in a young wine fade?
12 Sep 2005 by JR
Neil, Middle East: Recently on vacation, my spouse and I enjoyed a New Zealand 2002 Pinot Noir from Rockburn. However, the wine appeared to have a greater portion of acidity, i.e.zip. Will what I believe to be acidity, mellow after cellaring over a couple of years? Your thoughts if possible.... me: (I won't divulge in which Middle Eastern country you are nursing this love of wine.) High acidity is a characteristic of most New Zealand wines and certainly those of Central Otago. The big question is how much fruitiness there is to counterbalance it, and in 2002 there was no shortage of big, bouncing fruit and quite a bit of alcohol....
