Jason Palma, Sam's, Chicago: Bonnes Mares seems to me an excellent example that shines the most sympathetic light upon those who take a broad view of terroir as also encompassing "cultural and historical perspectives" [as described in David Schildknecht's recent article ].  That is to say that Bonnes Mares seems to me an excellent example of a specified instance of a terroir that, even in the capable hands of terroirists, manifests two distinct tastes more akin either to: (1) more weighty, more Morey notes, and (2) more ethereal, more Chambolle notes.  Given this, what dictates that this plot of earth to which we refer as the...
