Can you chaptalize Italian wine?
David Churchill, Toronto: Jancis, sorry if you've mentioned this before, but when exactly did Soave Classico achieve DOCG status? Also, can Italian wines be legally chaptalized? me: (I can't believe how Canadian this site has suddenly become!) Soave ascended to the dizzy heights of DOCG in 2002 - a little too grand for many of the wines, although the overall quality seems infinitely improved, don't you think? As for chaptalization, the Italians, much to their disgust, are not allowed to add sugar to musts to boost the final alcohol content of their wines but they are allowed, wherever they are I believe, to add concentrated...
