David Honeywill, Surrey: A question about "tears" or "legs". I am confused over the significance of tears being left on the inside of the glass after swirling. Could you please explain what causes it? I have noticed recently that some wines (usually young wine eg Felton Road Riesling 2003) leave large "drops" rather than "legs", why is that?
