Who makes model Chablis?

Patience Waddilove, Dorset: Thank you very much for the pointer to Sarah Marsh's first newsletter! Him-indoors is mad keen on Chablis, and her 2004 tasting notes are an early Christmas present. I believe you mentioned recently that Billaud-Simon wasn't really your model of Chablis. I wonder if you would share with us which Chablis is? me: I don't think I made any specific comments about Billaud-Salmon in Maturing Chablis but I have long been a fan of both Raveneau and Dauvissat (no great surprises there) and I think William Fèvre are doing a particularly good job at the moment - and make wine in quite useful quantity...
