Simon Tam, Hong Kong: The industry standard is that one llitre of water is needed to make one litre of wine in terms cleaning tanks and other equipment. So where is all this clean water coming from and where are the many litres of 'dirty' water going to....and how may they be treated? me: This is a fascinating aspect of our beloved wine...
