What and where to eat and drink in Rome

Just a quick question for Nick or yourself. I'm taking my wife to Rome in a couple of weeks’ time to celebrate our fifth wedding anniversary and I was wondering if you could recommend any good places to eat and any wine recommendations to try?

Alas we haven’t been to Rome for serious eating and drinking since, as I recall, I was reading Touching the Void (long before the film) and I suspect our recommendations may be out of date. I was there briefly filming in 2002 when I was struck by how few serious wines are made in the surrounding region...
