What can you tell me about taste precursors? What entries should I look at in the Oxford Companion ?
Julia Harding MW: The best starting point is the flavour precursors entry, then follow the trail of cross-references within that entry. This entry, like many others, has been updated for the new edition of the Oxford Companion to Wine (due out next September), and these revisions include some suggestions for further reading.
