Steve Dutton, Germany: When I was in California last year, I was told by two people working at different wineries that cold nights could cause a drop in the sugar content of a ripening grape. I find it hard to imagine how this can be (otherwise, how could grapes ever ripen in November here in Germany?), and I could find nothing under ‘ripeness’ or ‘ripening’ in the Oxford Companion .
