Gary Gillman, Toronto: Recently I was reading Cyril Ray’s Compleat Imbiber , a mid-1950s book that is somewhat baroque-sounding today but contains much of interest including a Raymond Postgate piece which covers a number of topics: wine and health; the merits of ageing wine – he states when in doubt always drink wine younger than older – and whether the concept of vintages can apply to warm climate wines such as those of Australia, Italy and Spain (and now one would add California) – he says, uh-uh.  He made one comment in particular that struck me in light of the recent posts on...
