Ari Soroken, Morrell & Co, New York: I did a search on your site and didn't find one reference to copigmentation, the practice of fixing colour. Is copigmentation another new manipulation, or something that's been practised for years? me: Just you wait for the new Oxford Companion , due out in sep 06. You’ll be well and truly co-fermented out. It’s not a new manipulation but a very popular technique now used worldwide emulating a practice that has been common in Côte-Rôtie for ages, specifically co-fermenting Syrah with a bit of Viognier.
