How atmospheric pressure affects wine

David Schildknecht, OH:   In the course of their wonderful notes on DRC , Casten and Kerrigan paraphrase Noblet as advocating "Bottling when going into a new moon -­ lower pressure settles the wine giving better clarity and yield from barrel." I know I have raised this topic before , but I would love for some scientifically educated purple pagers to supply some answers. - I have assumed in all of my ruminations on this subject (including in these pages) that it is lower atmospheric pressure that causes the wine to be roily[cloudy] and high pressure that encourages clarification....
