What is the role of grape seeds in winemaking?

Sean Robson, Hong Kong: Pips in grapes: I mentioned to a friend that they were rather undesirable in the production of wine, given that their juice, if crushed, is very austere/bitter. He then stated that supermarkets sold ‘seedless grapes’ and therefore why couldn't wine be made from grapes not containing pips? Is the answer to that simply that all Vitis vinifera have pips, QED, and that using, for example, Thompson Seedless, would not be suitable for producing an acceptable quality wine?
