Is a spiral cellar a good idea?
John Ramsden-Knowles, Brazil: Jancis, You made an earlier reference to spiral cellars. Do you have one and can you tell me if the temperature fluctuations and humidity ranges are acceptable. I would rather avoid building an above-ground cellar with cooling system, but am not sure about the merits of the spiral cellar configuration.The other factors are the maximum capacity a spiral cellar has ( I need space for c 5,000 bottles of different formats), and obviously you can't take it with you !
