A few days ago you had a post about sherry, and Victor, I think, mentioned that an association was using carbon dating to ensure that the age of the sherry was correct.
The procedure is described as follows: Aged Dated Sherry - Since the year 2000, the controlling board of the DO Jerez, known as the Consejo Regulador, has approved a category of 20 and 30 year old certified wines.
