Are 2002 burgundies now drinkable and 2003 bordeaux safe?

I have a number of points and queries. 1) Previously I asked for recommendations for wine under £3 for a wedding. I would like to feed back that the '05 La Serrana Tempranillo and ‘ 03/’04 Grange du Midi Marsanne were both excellent for the money and quite drinkable. I think I now know from trying some others (not recommendations) what you mean by 'industrial', but these certainly were not. 2) I am trying to decide what wines to withdraw from cellarage (Octavian) this autumn.
