Cellaring non vintage champagne
30 Dec 2004 by JR
Paul Chesson, Oxfordshire:   Do you cellar NV champagne? If so, which ones? I am a very patient person (at least where wine is concerned). me: I deliberately give non vintage Bollinger some extra bottle age and have been known to do the same for other heavyweight styles such as Alfred Gratien NV in my time, but I would be wary of ageing NVs routinely, even though it does generally seem to me that the cuv é es on sale in the UK and France taste younger than the same wines on sale in the US, and on the relatively few occasions I have drunk champagne in Australia, the wine has never seemed too young.
