Two days ago in Melbourne 50 top sommeliers from around the world sat down to a blind tasting of Australian Shiraz. 

The event was part of a sommeliers’ whistle-stop tour of the country, organised by Wine Australia to coincide with the World’s 50 Best Restaurant Awards taking place as this article is published, on Wednesday evening Melbourne time. But unlike most of the other tastings and dinners and visits on the somms’ busy itinerary, at this one they had to sing for their supper.
