Full bottle 1,290 g. This is a skin-fermented wine. Kabuğunda in Turkish means ‘with skin’. The grapes were sourced from old vines, harvested 1 October. They were destemmed and put into a tank. The juice was kept with its skins for 52 days, first at a low temperature to extract flavours and colour, then, once fermentation started, at 18 °C in a stainless-steel tank. It was aged on its lees for 3 months with lees-stirring twice a week. 552 bottles produced.
Bright, deep golden colour. Gorgeous aroma of bitter orange, barley sugar (a very British type of hard candy), hay, citrusy spice. Perfectly judged tannins give a firm structure but are not aggressive, fully integrated with the spice and bitter orange fruit flavours. Bone dry, extremely moreish, only gently tannic. Hard to predict how it will age as it is quite an unusual wine. That kick of tannin and dried grasses on the finish. Fresh, complex, moreish. (JH)
