Mauzac

Mauzac is the chief grape of Gaillac Blanc (in which it is blended with Len de l'El) and sparkling Blanquette de Limoux (in which it is softened with Chenin Blanc and Chardonnay). It has a particularly distinctive smell reminiscent of dried apple peel. Its late budding and ripening meant that it traditionally fermented long and slowly, still bubbling in the spring. Hence its association with wines of varying levels of fizz and sweetness.
