100% Juhfark, harvested 17 September, 6–12 hours’ skin contact, spontaneous fermentation in big barrels, with malo, and ageing for 11 months in 1,000- and 1,500-litre oak and acacia barrels. Bottled August 2021. RS 1 g/l, TA 6 g/l, pH 3.56, SO2 total 160 mg/l, SO2 free 24 mg/l.
Still a bit light on the nose but the firmness of the palate convinces you this wine will be worth waiting for. Ramrod straight! Bone-dry finish with some Magyar fire.
