A Cava compendium

Because I am Catalan, Cava is a wine I am very accustomed to drinking; it is an indispensable companion to every family meal I can remember and a natural taste from my cultural roots.
This gave me cause for concern when I conceived of the following article, because according to a study entitled 'A new approach using consumers "drinking histories" to explain current wine acceptance' (*see below for full publication details), historical drinking has a key influence over our wine preferences, and cava is such an internalised taste I felt at risk of compromising my objectivity.
