Aligoté

Burgundy’s second white grape makes tartish white wines for early consumption, but is capable of producing top-quality wine if the high acidity is balanced by full ripeness (usually only from the best sites. It is grown in Chitry in the Yonne, Pernand-Vergelesses in the Côte de Beaune, and most notably in Bouzeron, a village in the Côte Chalonnaise dedicated to the aligoté grape. The Republic of Moldova, Ukraine and Romania have significant vineyard area planted to Aligoté, and it is also grown in Bulgaria and Russia.
