Paşaeli, Hoşköy Cabernet Sauvignon 2015 Trakya
Full bottle 1,328 g. This 100% Cabernet Sauvignon is made with fruit grown in their single vineyard in Hoşköy near the city of Tekirdağ in Thrace. The fruit is fermented with native yeast at 25 °C for 3 weeks with pumping over. Then barrel-aged for 24 months in new and one-year-old French oak barrels. Bottle-aged for a minimum of 18 months.
Deep garnet and evolved garnet/brick rim. A particularly distinctive style of Cabernet Sauvignon. Very ripe black fruit, leathery, and although there is some cassis character it is more about dried fruits and with a savoury, almost tarry aroma. Big, rich, smooth, mouth-filling wine with all that ripe fruit balanced by the still-firm, chewy, dry tannins. Masses of character, chewy texture. Rustic power, and needs food. Quite hard work at the moment. (JH)
