This March, we’re fortunate to welcome Cellar Master and Director of Development, Charlotte Mignon, to Davy’s to host a masterclass tasting & dinner at Davy’s Wine Vaults. Charlotte joined the Larrivet team in 2020 and is key to the winemaking process. She is a crucial part of the driving force behind development and continuously experiments with various aging vessels including concrete eggs, amphorae, new and old barrels, as well as various grape varieties and blends as adaptations are made for climate change. Charlotte works closely with Managing Director Bruno Lemoine and Technical Director François Godichon, who together implement a “Burgundian” style, micro-parcel vinification approach, resulting in elegant and terroir-expressive wines This prestigious Pessac-Léognan estate dates back to the early 18th century, with current owners the Gervoson family taking over in 1987. The estate has truly earned its reputation and produces elegant wines with great character. After an aperitif, Charlotte will talk us through the history of the winery and how the wines are quickly becoming one of Bordeaux’s hotly anticipated releases each year. She’ll also speak about how wine is evolving and the measures her and the team are taking to battle climate change. We’ll taste through some of the estate’s finest wines and enjoy a specially prepared four-course dinner with pairings. The line-up will include recent vintages as well some stunning older classics for comparison.
