Paşaeli, Kaynaklar Cabernet Sauvignon/Cabernet Franc/Merlot/Petit Verdot 2016 Aegean

Full bottle 1,331 g. 60% Cabernet Sauvignon, 30% Cabernet Franc, 5% Merlot and 5% Petit Verdot. All four varieties are grown in a single vineyard of 4 hectares in Kaynaklar near the city of Izmir. Kaynaklar is the first wine made with the fruit of Kaynaklar (K2 is the second). All the varieties are fermented separately at 25 °C with ambient yeast for 3 weeks with pumping over. And they are barrel-aged for 24 months, half in new and half in one-year-old French oak barrels. Further bottle-ageing for a minimum of 12 months.
Deep crimson with a ruby rim, opaque core. As always with this wine, there is an intense fruit sweetness to the aroma, which becomes more leathery with age but also has the sweetness of dried cherry. Yet still that slight minty/leafy freshness in the aroma. Powerful, bone-dry and still pretty tannic, a good foil to the fruit ripeness. The tannins need time but I wonder if the fruit will fade if you keep this until the tannins are soft. Better to enjoy it with food in the meantime. Personally, I'd keep this a little longer before opening but not too long. I know this is the more ambitious wine from these vines but I find the K2 better balanced and more to my taste. (JH)
