50-year-old Silvaner vines grown in porphry soils topped with a thick layer of 30-million-year-old fossil limestone. Matured in regional oak barrique and 600-litre barrels of German oak. Limited production of 1,500 bottles. 
Mature vines, ancient soils, extended lees contact. Nothing – beyond the fermentation – about this Silvaner is spontaneous. Deep toast aromas, fresh brioche, pine and a delicate white-floral character with hints of brioche from the long sur-lie ageing. Yet, it really comes into its own on the complex palate, filling the space between deep yellow quince and pear with a creamy texture and deep salinity. A big wine that requires time and space; a quiet, deliberate nod towards Burgundy without ever leaving Siefersheim. (PS)
