Wild speciality of Marcillac and encouraged elsewhere in south-west France. Called Brocol in Gaillac and Pinenc in Madiran, it can add some rustic, smoky flavours to the blend. It is also important in the little-seen wines of Entraygues-Le Fel and Estaing, neighbours of Marcillac.
