Last year I reported on Salvo Foti, one of Etna's most prominent consultant oenologists, and especially his stance on ambient yeasts (as can be read here). Although Foti seems not to be over-fond of journalists asking superfluous questions (at least that was how I experienced our exchange), he is keen to communicate on his favourite subject, Etna and its wines, judging by the several books he has published on the subject, one of which he pressed in my hands last year just before saying goodbye.
