Living Wine, the title of the 9th MW Symposium held in Logroño last month, conveys the heart of many of the panel sessions over the weekend, from looking at the vineyard as a sustainable ecosystem to the preservation of old vines, slicing into vine trunks to separate the living from the dead and getting up close to the microbiome (the populations of bacteria and fungi) of the soil, vine and winery.
