A touch of smoke, a lick of eucalyptus leaf mould, forest-damp mushrooms and dried cherries. The tannins have a mountain-fine tea-leafed astringency and there is a whip of fresh-ground black peppercorn through the fruit. A whicker of scented leather, rose petal, delicate cinnamon and the strange, liquorice-green sweetness of a fresh stevia leaf. Complex but subtle, fine and fragrant. I would love to try this with beef carpaccio. (TC)
